For the love of chicken

If you're like me...sometimes you just have no clue what to make for dinner.

I think I struggle with that every. single. week. My daughter is extremely picky (which I assume most children become that way even if it's just for a little while), and trying to figure out something we all want is difficult.

However, there is one meal that I would say is my "go to" meal:

***Lemon Pepper Chicken with Rice***

If you haven't tried Lemon Pepper ever, you're missing out! It's a meal that you can snap together within 30-45 minutes and feed a family of 4 or even 5!

So...if you don't know what to make tomorrow night for dinner or you've never had Lemon Pepper anything, here's the recipe:

Lemon Pepper Chicken with Rice

- 6 Peices of thinly cut chicken breasts (about 1 LB)
- 1/2 cup flour
- 2 Teaspoons Lemon Pepper Seasoning
- 1/2 Teaspoon Salt
- 1/3 Cup Butter (I like olive oil butter sticks)
- 2 Lemons, 1 1/2 sliced & 1/2 of one left for lemon juice
- Uncle Ben's Microwavable Rice - In roasted chicken flavor

1. In shallow bowl, combine flour, salt, and lemon pepper seasoning. After combined, coat one peice of chicken at a time on both sides.

2. In skillet, put butter to melt, then cook each breast until golden brown on both sides. (About 3 minutes each side). Set each piece aside on a plate when done.

3. Once all chicken is done cooking in skillet, once last piece is removed, add lemon slices to skillet. Cook for about 2-3 minutes on each side until slightly brown.

4. Once done, remove lemon slices to plate, and add chicken back to skillet. Then sit lemons slices on top of chicken. Drizzle with lemon juice over top of everything. Then cook for additional 2-3 minutes.

5. While chicken is finishing up soaking the lemon in, cook instant rice according to instructions. (The ones I got were 90 seconds in the microwave.)

6. Place rice on plate, and top with chicken and a lemon slice from skillet.
